Julie and Julia

When the lightening struck our house last we were in the middle of watching Julie and Julia.  We still haven't finished it but it got me thinking that it would be fun to cook through a cook book.  I've been looking at this one...
I usually end up making one of several go-to meals when I do have time to cook.  Here is one of our favorites!

Meat and Potato Lover's Meat Loaf Too
Meat Loaf
1 c quick cooking oatmeal
1 c shredded potatoes
2 eggs
1/3 c ketchup
1 pkg beefy onion soup mix
½ tsp pepper
2 lbs ground turkey or lean ground beef 
Optional Glaze
½ c ketchup
¼ c packed brown sugar
2 tablespoons mustard
  
Preheat oven to 350F.  Lightly grease a shallow baking pan.  Combine oats, potatoes, eggs, ketchup, soup mix and pepper; mix well.  Add ground turkey or lean ground beef; mix well.  Shape into loaf and place into prepared baking pan.  Bake 50 to 60 minutes or until done and let stand 5-10 minutes before slicing.
To prepare glaze, combine ketchup, sugar and mustard.  Mix well.  Pour over meatloaf during last 15 minutes of baking.
It is SOOOOO good!
